1 jug of satay sauce (you will only need a little)
1 can coconut milk
1 can roasted red or yellow peppers (you will have extra)
1 cup chicken/vegetable stock or water
1 lb Seafood or meat of your choice
1 lb Fresh vegetables (recommended handful of green beans and an onion)
A handful of crushed peanuts (optional)
Fresh Coriander (optional)
Dash of Fish sauce (optional)
Clean and cut your meat in to bite size pieces. Wash and prep vegetables. With a little oil in a frying pan add your meat about a half cup of the Satay peanut sauce, and 1/2 cup of the stock or water. Add vegetables and cook on medium heat for about 3 minutes and then add the can of coconut milk. Continue cooking for 3-8 more minutes or until meat is done. Set to the side. Bring a large pan of water to a boil. Add the Pad thai rice noodles and cook for about 5 minutes. Drain and noodles then add to satay meat and vegetable mix.. On medium heat mix and heat until hot you may want to add the remaining 1/2 cup of stock or water to loosen the sauce, sprinkle with peanuts and coriander.
Serve with sweet chili sauce. Serves 4-6 people.
